Day 67 of my fast, Day one of the rest of my life
OK folks I promised more low fat recipes to tempt the taste buds and keep those pounds away while enjoying the Super Bowl. So I’m not going to say much today, my favorite one is the meatball one because it’s made with oatmeal and ground turkey, and here is a quick tip if you don’t like the sweet sour, mix up some barbecue sauce and some cayenne pepper and some hot sauce and you’ve got yourself one hot spicy meat ball, better for you than hot wings and just as spicy.
Sweet and Sour Turkey Meatballs:
- 2 pounds ground turkey breast
- 3/4 cup dry instant or rolled oatmeal
- 1/4 cup egg beaters
- 1/2 cup minced onions
- 1/2 cup finely chopped green bell pepper
- 2 teaspoons Worcestershire sauce
- 1 tablespoon garlic powder
- 1 teaspoon ground black pepper
Sauce:
- 1 can (14 ounces) pineapple chunks, solids and liquids
- 2 cups frozen chopped green beans
- 1 pint cherry tomatoes, halved
- 3 tablespoons cornstarch
- 1 tablespoon low-sodium soy sauce
- 1/2 cup vinegar
Instructions:
1. Combine all meatball ingredients in a bowl and mix together. Shape into one-inch meatballs.
2. Brown meatballs in a non-stick skillet until all sides are no longer pink. Place in a slow cooker.
3. In a medium sauce pan combine the canned pineapples (chunks and juice), green beans, and tomatoes and heat over medium heat until boiling. Combine cornstarch, soy sauce, and vinegar. Add to the pot and stir until thickened.
4. Pour sauce over meatballs in the slow cooker. Cover and cook on low for five hours.
Alternative Preparation: Recipe can be baked in a conventional oven. Prepare as above except place browned meatballs in a casserole dish and cover with sauce. Bake in a 350-degree F oven for 30-45 minutes.
Pita Pocket Pizzas
6 pita pockets
12 ounces pizza sauce
6 ounces fat free jack cheese
6 ounces fat Free cheddar cheese
Place pita pocket on a clean surface. Spread 2 ounces of pizza sauce on each
pocket. Top with one ounce each of jack cheese and cheddar cheese. Sprinkle
Cheese with water. Place in 350-degree oven for 10-15 minutes.
Turkey Chili
Ingredients:
- 1 pound lean ground turkey
- 1 small onion, chopped
- 3 15-ounce cans red kidney beans, drained
- 3 14.5-ounce cans chopped tomatoes
- 1 cup water
- 2 celery stalks, chopped
- 1 medium green pepper, seeded and chopped
- 1/4 cup red wine vinegar
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
Optional Toppings:
- grated cheddar cheese
- diced onion
- low-fat sour cream
Instructions:
- Heat a large stockpot over medium heat until hot. Add ground turkey and chopped onion, and cook until browned.
- Add the remaining ingredients and bring to a boil. Reduce heat and simmer on low heat for two hours.
Mock Chicken Wings
Ingredients:
- 3 tablespoons nonfat buttermilk,
- 3 tablespoons hot sauce,
- 3 tablespoons distilled white vinegar, divided
- 2 pounds chicken tenders,
- 6 tablespoons whole-wheat flour
- 6 tablespoons cornmeal
- 1/2 teaspoon cayenne pepper
- 2 tablespoons canola oil, divided
Instructions:
- To prepare wings: Whisk buttermilk, 2 tablespoons hot sauce and 2 tablespoons vinegar in a large bowl until combined. Add chicken; toss to coat. Transfer to the refrigerator and let marinate for at least 10 minutes or up to 1 hour, stirring occasionally.
- Meanwhile, mix flour and cornmeal in a shallow dish. mix the remaining 1 tablespoon hot sauce and 1 tablespoon vinegar in a small bowl; set aside.
- Remove the chicken from the marinade and roll in the flour mixture until evenly coated. (Discard remaining marinade and flour mixture.) Sprinkle both sides of the chicken with 1/2 teaspoon cayenne.
- Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add half the chicken, placing each piece in a little oil. Cook until golden brown and cooked through, 3 to 4 minutes per side. Transfer to a serving platter. Repeat with the remaining 1 tablespoon oil and chicken, reducing the heat if necessary to prevent burning. Transfer to the platter. Drizzle the chicken with the reserved hot sauce mixture. Serve with carrots, celery and Spicy Blue Cheese Dip.
Spicy Blue Cheese Dip.
- 2/3 cup reduced-fat sour cream
- 2/3 cup crumbled blue cheese
- 1 tablespoon distilled white vinegar
- 1/4 teaspoon cayenne pepper
To prepare dip: Whisk sour cream, blue cheese, 1 tablespoon vinegar and 1/4 teaspoon cayenne in a small bowl. Cover and refrigerate until ready to serve
I didn’t include the calorie count, because hay it’s the super bowl, just enjoy yourself, they all run around 300 or 400 calories so don’t go all hog wild on them, fill up on veggies as much as possible. But you have to indulge yourself every now and then. Do a little extra exercise, from now till Sunday, and then some more next week, But on Sunday sit back enjoy the game, party with your friends. I’ve given you some healthy tools, so it won’t be a complete devastation to your weight management. But live life, that why we’re all on this planet, everything in moderation.
