Well it’s getting to be Super Bowl time again, and there is nothing worst than seeing the rest of the world celebrating and your stuck munching on a carrot stick, so I thought that I would put together a few low fat versions of some super bowl favorites to help us dieting folks feel like a normal people and not feel too guilty come the morning after, no mater who wins the game (go Saints)
First off; carrot sticks and raw veggies aren’t bad, I’m constantly amazed on finding out how few calories are actually in a raw veggie patter, you have that fantastic crunch and chewing action going. But some of you just can’t eat raw veggies alone, you feel the need to dip them into some fat laden chip dip in order to feel like you’re snacking, well I ran across a few recopies for low fat chip dip.
The foundations for these dips are pretty much the same. You start with a cup of low fat cottage cheese, then you add a ¼ cup buttermilk or skim milk, or even ketchup to thin out the cottage cheese, add that with a bunch of other spices and blend it all up and you’ve got yourself a low fat dip. Here are a recipes I’ve pulled from a whole lot of places
LOW FAT TACO DIP
TACO DIP:
1/2 c. low fat cottage cheese
1/4 c. catsup
1 tbsp. taco seasoning mix
1 tsp. horseradish
1/2 c. low fat yogurt
Combine the cottage cheese and catsup in a blender until smooth. Add the taco mix and horseradish. Place in a bowl, fold in the yogurt, cover and chill. Serve with raw vegetables or toasted tortilla chips.
LOW CALORIE SNACK DIP
2/3 c. low calorie cottage cheese
1 tsp. granulated chicken bouillon
1/4 c. skim milk
Onion salt and garlic salt to taste
Mix all ingredients in blender. Dip especially good with cucumbers, celery, cauliflower and carrots.
BASIC LOW - CALORIE DIP
1 c. cottage cheese
1/4 tsp. garlic salt
2 tsp. lemon juice
Dash of pepper
1/2 c. buttermilk
1 tbsp. dried parsley
2 tbsp. monosodium glutamate
Put all ingredients in a blender. Mix well. Store in glass container. Refrigerate. Serve with assorted crisp vegetables.
LOW CALORIE MOCK FRENCH ONION DIP
1 lg. cottage cheese
2 pkgs. weight watchers onion broth
1/4 c. minced onions
2 tbsp. celery and parsley flakes
1/2 tsp. paprika
Black pepper to taste
1/4 c. water
1 tbsp. lemon juice
Place all ingredients into a blender or food processor and blend until smooth and creamy. Chill in refrigerator at least an hour before serving.
SPINACH DIP
1 c. fresh spinach, chopped
1 c. 1% low-fat cottage cheese
1/2 c. green onions, chopped
1/2 c. reduced-calorie mayonnaise
1 tbsp. reduced-sodium soy sauce
1 clove garlic, minced
Sweet red pepper strips (optional)
Combine first 6 ingredients in container of an electric blender; process until smooth. Cover and chill. Garnish with red pepper strips, if desired. Serve with raw vegetables. Yield 1 2/3 cups.
Of course if your going to go with chips be sure you buy the baked stuff or you can make your own by cutting up you own tortillas and baking them up in the oven and adding your own seasonings, and you can cut up your own potatoes to. And don’t forget pretzels are a great alternative snack as well.
I don’t want this blog to get too long winded so I will bring you some more recipes tomorrow, the good stuff, Meatballs, Pizza, Chili, mock chicken wings. Oh and for those who are wondering what I’m talking about food for, because I’m on a fast, I allow myself one meal a week, and I’ve been saving up my meals for a couple of weeks now, so I can celebrate the Super bowl, so everything equals out in the end

Sounds good. Been making my own whole wheat tortillas. It is simple enough. Using Crisco but still only about 63 calories per 8 inch tortilla. I have been having one each morning with an egg fried in a little spray stuff and some very lean beef or a slice of deli ham. Runs about 200 cals for breakfast not bad.
